Pumpkin Cookies


1 cup sugar
1 cup canned pumpkin
1/2 cup shortening
2 cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1/2 cup raisins
1/2 cup chopped nuts (optional)

Heat oven to 375 degrees. Mix sugar, pumpkin, and shortening. Stir in flour, baking powder, baking soda, cinnamon, and salt. Add raisins and nuts.

Drop dough by teaspoonfuls onto ungreased cookie sheet. Bake until light brown, 8-10 minutes. Immediately remove from cookie sheet; cool.

Makes about 4 dozen cookies.
